Hello.
Is there a way to retrieve more than 3 landmarks and/or hotels in the API?

Hello,
The result is intended to display in the drop down list right under the search box. It is used to suggest matches ones. There is no way to get more results, you may try hotels.com to experience the same.

For instance, when using “locations/search” endpoint and searching for New York there are 3 landmark groups available. Is there a chance to retrieve more of them?

I am not sure what you mean, the …/properties/list endpoint is used to list hotels in specific area.
