Is there a documentation that explains each of the elements of the data structure that the api of products, categories and products by category returns?
What I try to do is obtain all the data in such a way that it has the structure and design of product options (colors, sizes, etc.) and be able to save that structure so that it can have a functionality similar or equal to that offered by AliExpress in product detail and product search

Hi,

you can find this kind of information in the productSKUPropertyList.

All sizes, colors and so on are listed there, together with their prices, mapped to the sku which you can later use to identify this variant of the product
